16 large sea scallops (about 1½ pounds)
4½ pounds bone-in, skin-on chicken thighs

Monday: Pan-Seared Scallops with Citrusy Corn Succotash
Fancy seafood? On a Monday night? Trust us, it’s easy. And you’ll want to eat the accompanying corn succotash by the bowlful. Save the rest of those cherry tomatoes—you’ll use them up later in the week.
Tuesday: One-Pot, 15-Minute Pasta Limone
Few things are more satisfying than a one-pot pasta. A one-pot, 15-minute pasta with six ingredients is one of those things.
Wednesday: Honey-Mustard Chicken Bake
This savory and sweet chicken bake relies on basic pantry items for its easy glaze, so you can do minimal work. Pack up your extra asparagus and chicken; they’ll come in handy again on Saturday and Sunday.
Thursday: White Risotto with Corn, Carrots and Kale
Creamy, satisfying risotto gets a bad rap for being fussy and time-consuming. This veggie-centric version is here to prove that theory wrong. We call for corn, carrots and kale, but you can really use whatever produce you like.
Friday: Cheater’s Vegetarian Pizza with Zucchini and Bell Peppers
Skip the takeout pie and make this impossibly easy homemade version instead. You start with store-bought flatbread, so it’s basically foolproof.
Saturday: Cheater’s Skillet Lasagna with Corn and Cherry Tomatoes
This takes 35 minutes from start to finish and requires a single skillet, but even better is that it uses up a ton of that gorgeous fresh produce you bought at the beginning of the week.
Sunday: Sticky Orange Chicken with Caramelized Onions and Fennel
Sundays are for one-and-done sheet pan meals. With minimal cleanup, this sticky chicken will end your week on the best note ever.
