Costco's New Lemon Meringue Cheesecake Is a Glorious Dessert
First, there was Costco’s peanut butter chocolate cream pie and now, just in time for summer, they’ve released another hot find: the Costco Lemon Meringue Cheesecake. Yes, you read that correctly. It’s a delicious, delicate mashup of fluffy lemon meringue pie and classic, creamy cheesecake and it’s waiting for you, whispering your name from the chilly refrigerated bakery case at Costco.

What is in the Costco Lemon Meringue Cheesecake?
The ingredients are everything you would expect from your traditional, store-bought cheesecake and lemon meringue pie—cream cheese, lemon curd, meringue and a graham cracker crust (not in that order). The graham cracker crust is very similar if not identical to the one the warehouse club uses for their peanut butter chocolate cream pie. Solid, crumbly and delicious.
Next up is a thick layer of plain cheesecake, heavy and rich. The cheesecake is topped with a tangy layer of lemon curd, and then finally, the torched-to-perfection meringue which is piled so high it smooshes the lid of every pie in the bakery case. The ingredients in this pie combo are not the exact ones you would use if you were making everything at home from scratch, but that’s not why we’re here, of course.

What does the Costco Lemon Meringue Cheesecake taste like?
“That is so good!” said a Costco employee walking by me who pointed at my perfectly picked pie from the case as I placed the three-pounder in my cart (three pounds, 16 oz. to be exact). And she was right—it is so good. But this is a seriously sweet pie. You know when you eat something so sweet, you can feel your brain buzzing? Yeah, this is that feeling after more than a few bites. And I couldn’t tell you how much sugar is in it because, unlike the peanut butter cream pie, this one didn’t have a nutrition information label slapped on the bottom. The size is roughly the same as the peanut butter pie, which served 16 (or so it said) but you could easily get 20 servings from this one. A tiny sliver and you’ll be more than satisfied.
The graham cracker crust is thin and it’s kind of like it’s there out of obligation—it doesn’t add or take away from the pie, but it definitely isn’t the star of the show here. You don’t notice it as much as when you’re eating regular old cheesecake. And that’s because there’s so much going on with this pie. The real drama is the way the cheesecake layer softens into the lemon curd as you take a bite and is enveloped by a pillowy meringue hug at the end. It’s glorious.
The lemon curd is the sweetest part of this pie and it’s also super tart—the texture wasn’t my favorite straight out of the fridge—it was too goopy—but letting it sit for a minute seemed to do the trick. It’s way less curd than you would get in a traditional slice but we’re being super untraditional with this one. It’s sweet and also incredibly sticky so prepare to wash your hands well after cutting or eating it.
The meringue is bouncy and proud on top and holds up nicely even out of the fridge for a good length of time. If you’re lucky enough to get a bite of just meringue and cheesecake together, you’ll wonder why this hasn’t been a thing (until now).
The cheesecake is solid, creamy, cheesy, smooth and everything that a good-quality cheesecake should be. It knows its place in this dessert; it’s not trying to outshine the other ingredients but rather works with them to create the perfect patchwork of pie in your mouth.

How to find the Costco Lemon Meringue Cheesecake
Even though this one was just released, users on TikTok are already dreaming of a key lime version to bask in the sun next to this one. Officially released in the past week or so, it should be on the shelves of your local Costco pronto. It wasn’t hard to find in my local store and there were plenty of them in the case when I went mid-day on a Monday. Pick one up for your summer party for $19.99.
