We've really been going through a brie phase here at Delish. We've wrapped it in pastry dough, topped it with caramel apples, and made the most ridiculously delicious smashed potatoes with it. It's a cheese that everyone loves, that feels fancy even though you can get it pretty much anywhere.

This creme bruleed brie is about as fancy as it gets. Its golden crust (reminiscent of the classic custard dessert) provides a sweet crunch that perfectly compliments the creamy richness of the brie. The result is eye-catchingly golden - perfect as a centerpiece for your next holiday spread.

So how's it done? First, bake the brie by itself to get it nice and warm. I like to bake brie in a small dish that just fits the brie, so if you spring a leak you don't have to worry about transferring the gooey mess to a serving tray. Next, sprinkle it with salt and sugar and pop it under the broiler. If you want really perfectly golden results, a kitchen torch works even better. Make sure to get the surface of the cheese nice and golden, and when it comes out, let it cool at least 10 minutes. This helps the sugar layer to harden and give it that classic crunch. Your guests won't know what hit 'em! But they might ask for another round.
