Craving Pizza But Trying To Be Good? Make This Instead

The Delish team could never give up pizza. We'll always find a way to sneak some mozz and pepperoni in a recipe, even when we're trying to be healthy. (Remember these spaghetti squash nests, that zucchini cheesy bread, and those eggplant bites?) You better believe that with the new year, we have new (halfway) healthy pizza snacks.

First up: Pizza Crisps, which are basically a pepperoni version of frico - a wafer made out of crispy shredded cheese. Normally, frico is made with Parmesan, but here we used parm and mozzarella. (We know you're not mad about that.) To make the crisps, create little piles of cheese on a parchment paper-lined baking sheet, then flatten the mounds slightly. Sprinkle with Italian seasoning and mini pepperoni, and bake for about 12 minutes.
While baking, the smell of bubbling, verging-on-burnt cheese will be wildly intoxicating. Thus, the urge to grab one immediately from the pan will be very strong. Please try to resist and let them cool on the pan for a bit. Not only to avoid burning yourself, but because the crisps need to cool before they get nice and crunchy.
