Denver Vietnamese restaurant among the best new restaurants of 2024: Bon Appetit

DENVER (KDVR) — Denver Vietnamese restaurant Sap Sua was recently named one of the 20 best new restaurants of 2024 by food magazine Bon Appetit.

This is not the first time the self-proclaimed non-traditional restaurant, located at 2550 E. Colfax Ave., has been applauded. In late 2023, it was named one of the 50 best new restaurants of the year by Esquire magazine.

It was also a semifinalist for Best New Restaurant in the 2024 James Beard Awards.

All 20 restaurants on the Bon Appetit list opened between March 2023 and March 2024.

Another Denver restaurant earns coveted Michelin star

According to Bon Appetit, at Sap Sua, “Vietnamese flavors blend into those of other cultures,” and “point to two leaders who know when to stick to tradition and when to color outside the lines.”

Those two leaders are husband and wife pair Ni and Anna Nguyen, who Bon Appetit said moved to the Mile High City in late 2020.

The restaurant’s name comes from the Vietnamese language, where s?p s?a means “about to” or “almost.” The restaurant’s website said this reflects their philosophy that “you’ll never be the best version of yourself.”
