Serves 4 | Prep time: 5 minutes | Cook time: 20 minutes
Ingredients:
1 cup shredded part-skim low-moisture mozzarella cheese
1/2 cup grated Parmesan cheese
2 large eggs
2 fresh jalape?o peppers, seeded and sliced
Directions:
Preheat the oven to 375° F.
Line a baking sheet with parchment paper or a silicone mat.
Combine the mozzarella, Parmesan, and eggs in a bowl and mix until fully combined. Spoon the mixture onto the prepared baking sheet in 4 portions. Top each with slices of jalape?o.
Bake for 15 to 20 minutes, until the cheese has fully melted and the bread begins to brown.
