Good question! Simply, Kong technically hasn't earned the title yet in the MonsterVerse. For Godzilla to earn the King of the Monsters title, he actually had to unseat and defeat Ghidorah in Godzilla: King of the Monsters. In Godzilla vs. Kong, Kong didn't defeat Godzilla, but Mechagodzilla. It remains to be seen if that's earned him royal status with the rest of the creatures of Hollow Earth.
