Sometimes things just don't go according to plan. For Mandy Moore, "a major bout of food poisoning" on the second day of her travels through Ecuador was definitely never part of the plan. But the actress learned an important lesson from it.

"I love an end of year lesson (one that I’ve encountered a million times before and will again, btw)," the This Is Us star wrote on Instagram. "Wasn’t meant to be."

Mandy revealed in her post that she had planned to climb the second-tallest active volcano in Ecuador with husband Taylor Goldsmith. Her friend Melissa Reid, who was the first woman to ascend and descend Mt. Everest without oxygen, was slated to be their guide up Cotopaxi.

But on just the second day of their trip, the best laid plans went awry as husband and wife fell victim to food poisoning. The pair could not continue the physical trip, which would have required proper hydration and nutrition, as well as acclimatization hikes before their summit push. And so they made "the tough call to travel home" while still sick.

"We showered and crawled into bed-shells of ourselves — but quickly had the kitties/dogs by our side and our own Mountain View out the window to enjoy," Moore wrote. "I think the Universe must have wanted us to slow down and just savor some time at home. And we shall. It just means that there are more adventures to come."

In a comment on Mandy's post, comedian Chelsea Handler recommended that she fix what ailed her with food.

"Yes, sometimes plans don’t work out, and when we accept it instead of resist it, we suffer less and appreciate what we do have," Chelsea wrote. "Merry Christmas to both. Have a Hot Toddy."

"Happy holidays to you too, friend!" Mandy responded. "And yes to Hot Toddy (when we’re done with the Pedialyte)."
