Food truck owner opens permanent spot for other vendors

Sarah Carter and members of the Beckley-Raleigh Chamber of Commerce cut the ribbon on the new Fire ’N Ice Food Truck Court in Beckley on Tuesday.

Carter owns the Fire ’N Ice Food Truck, which has a rotating menu throughout the year. She said she wanted a permanent location for food trucks to be able to serve customers and for customers to be able to find them all in one place.

“The intention for this is to make it a food truck court for Beckley, Raleigh, southern West Virginia, and I believe it’s the first one in the state,” Carter said. “So instead of finding a food truck on this corner or another corner, you come here.”

It’s on the corner of Pinewood Drive and Market Road.

Carter graduated from Mountain State University Culinary Arts program but worked in the coal industry for 19 years.

“I decided it was either be there the rest of my life or do what I wanted to do,” she said. “This has been incredible – in just two months it’s really taken off.”

She said it’s important for food truck vendors to have a permanent place to set up. “They need to be able to function on a daily basis, not just survive on their weekend business.”

Fire ’N Ice Food Truck Court will be open most week days from around 11 a.m. until 7 p.m.

Individual trucks may be set up on Saturdays and Sundays, and local vendors are also encouraged to set up.
