This Fresh Carrot Gimlet Is the Best Way to Drink Your Veggies

Summer is the season for bountiful produce! When you have too many garden vegetables to eat, a smart way to save them is to turn them into homemade juices.

One of our favorite juices combines carrots, ginger, and cucumbers. If you have any of these in your own vegetable garden, not only can they be turned into delicious and healthy homemade juices but can be incorporated into delightfully creative cocktails!

When combined with a bit of gin, Italian aperitivo, and fresh lime juice, our homemade carrot-ginger juice is transformed into a vibrant summertime gimlet that’s a perfect match for your next garden party or back porch happy hour.

Ingredients

  • 1 1/2 oz.

    homemade carrot-ginger juice (recipe following)

  • 1 1/2 oz.

    gin

  • 1/2 oz.

    Cocchi Americano

  • 1 oz.

    fresh lime juice, plus lime wheels, for garnish

Directions

  1. Combine carrot-ginger juice, gin, Cocchi Americano, lime juice, and ice in a cocktail shaker. Shake until well chilled, 10 to 15 seconds.

  2. Strain into a chilled coupe, garnish with a lime wheel.

for Carrot-Ginger Juice:

  1. In a juicer, juice 3 carrots, 1 small cucumber, 1 celery stalk, 1 orange (peeled), 1 apple (peeled and cored), and 2 inches of ginger. (Alternatively, you can combine all ingredients in a blender and blend until smooth, then strain through a fine-mesh strainer.) Store refrigerated in an airtight container. (Makes about 2 cups.)
