Green Goddess Pasta Salad

Sliced almonds are a supermarket shortcut that provides protein, calcium, and a satisfying crunch.

Ingredients

  • 12 spinach-and-cheese mini ravioli or tortellini

  • 1 asparagus, trimmed and cut into 2-inch pieces

  • 1 frozen peas, thawed

  • 3 sliced almonds

  • 6 chopped upland cress, watercress or baby arugula

  • 1 extra-virgin olive oil

  • 1/2 coarse salt

  • 1/2 freshly ground black pepper

  • 1/4 Parmesan cheese shavings
