Now that the temperatures are heating up, I’m tempted to grill anything and everything I can. Food just tastes better with a little char, and there’s nothing better than cooking outside. (Am I starting to sound like Bear Grylls?) Salmon is one of my favorite fish to grill, and it couldn’t be easier.

1. Choose the right cut.

It’s best to start with thicker cuts such as salmon steaks or filets. Do yourself a favor and keep the skin on your fish - it’ll help keep it together once the fish starts cooking.

2. Pat it down.

Pat the salmon dry with paper towels and season all over with salt and pepper. Oil the grates of your grill and heat it to medium-high.

3. Sear it!

Place salmon skin side down for crispy skin and let cook 6 to 8 minutes, or until the bottom half of the fish looks opaque and the skin easily releases from the grill. Flip and cook 4 to 6 minutes longer, or until the entirety of the fish is cooked through.

4. Let it rest.

Remove your salmon from your grill onto a clean plate and tent with aluminum foil. Like a good cut of beef or pork, fish needs some time to rest. You don’t want to lose all those delicious juices!

5. Serve it up!

After 5 minutes of resting time, you’re ready to serve! Add a squeeze of citrus and some chopped fresh herbs and you’ve got a glorious summertime dinner you’ll want to make over and over again.
