Joanna Gaines' Favorite Dish Involves a Super Smart Meal Prep Hack

We're not too surprised that Joanna Gaines has a few tricks up her sleeve to make meal-prepping for her family a breeze. After all, she did just release one of the most comprehensive cookbooks we've seen this year. In an interview with The Kitchn, the former Fixer Upper star shared details about how she hacks her approach to meal prep for the tastiest (and easiest!) results.

Gaines has always said the key to getting dinner on the table for Chip and her children is planning in advance, and she even has a free meal prep guide on her blog. But her all-time favorite dish to make in advance is chicken enchiladas, one of the many recipes featured in Magnolia Table: A Collection of Recipes for Gathering.

"I've been making chicken enchiladas a lot lately. No one has complained about it yet," Gaines told The Kitchn. "I always make the guacamole and the salsa on the side. There's just something about that mixture that's yummy."

But Gaines' chicken enchiladas come together in just 20 minutes because she uses store-bought rotisserie chicken to her advantage. Rather than cooking and shredding the chicken herself, Gaines' saves time by incorporating leftover rotisserie chicken to get her enchiladas on the table in no time.
