The Chez Pim blogger has opened a restaurant aimed at changing how people think about Thai cuisine.

Bangkok-born food fanatic Pim Techamuanvivit is a longtime influencer. Fourteen years ago she launched the superpopular blog Chez Pim. Now she's opened a San Francisco restaurant, Kin Khao, dedicated to authentic Thai food. At this chefs' hangout, Techamuanvivit eschews pad Thai; she works alongside chef Mike Gaines to develop dishes that are properly complex and funky. "It's a bad habit at too many Thai places to go too sweet or spicy," she says. She'd like to rid the world of Thai peanut sauce, but there is a condiment that anchors her menu: chile jam. The mix of garlic, tamarind, shrimp paste and chiles for which her grandmother was famous shows up often, including in a fragrant broth for cherrystone clams and a bold dressing for duck-egg salad. 55 Cyril Magnin St.; kinkhao.com.
