My mom holds the title of “fruit cobbler queen” in my book. She can make this classic Southern dessert using any fruit, and every batch is sweet and buttery with just a hint of tartness. Having 10 large peaches on hand, I doubled this recipe when making it. The freshly baked cobbler was a sight to behold, and the wait before taking the first bite wasn’t long — thankfully! Trying a spoonful of the cobbler, I noticed right away that the peaches were tender without being mushy. The topping had an airy texture that complemented the softness of the cooked fruit. Plus, the sugar mixed with the peaches’ juices created a sweet syrup that kept the cobbler spongy and moist. This straightforward recipe is going directly in my back pocket. Plus, it's peach season — so I'll have extra fruit that I can put to good use!
