LeBron James' Honey-Lime Sriracha Salmon is a Little Spicy, a Little Sweet and So Delicious
We're in the final stretch of the Paris Olympics and there's much to be discussed about the stellar performances from the athletes representing each country. While much of the focus has been placed on Simone Biles and the women's gymnastics team, there's another G.O.A.T. that's been making waves in Paris: LeBron James.
Though it should come as no surprise to anyone that LeBron James has been dominating the court, what always surprises me about the nearly 40-year-old player is his ability to stay sharp and focused. After digging around on the internet, I may have found one of his "secret" ingredients for staying at the top of his game—his Honey-Lime Sriracha Salmon.
Salmon is a gold medalist when it comes to nutrition. The fish is packed with omega-3 fatty acids that support heart health and reduce inflammation, which is key for recovery after intense training sessions. The high-quality protein in salmon also helps build and repair muscles, so it only makes sense that this is one of LeBron's favorite game-day dishes.
With hopes that it would become one of my favorites as well, I headed to my kitchen to see if this was going to be a slam dunk of a recipe.

Ingredients For LeBron James' Game Day Honey-Lime Sriracha Salmon
For this recipe, you'll need salmon, quinoa, coconut oil, coconut milk, sea salt, broccoli, olive oil, minced garlic, ground black pepper, lime juice, shredded coconut and garlic powder.
To make the honey-lime sriracha sauce, you'll need to grab fresh cilantro, honey, sriracha, olive oil, limes, sea salt and more ground black pepper.
How to Make LeBron James' Game Day Honey-Lime Sriracha Salmon
Begin by rinsing the quinoa under cold running water. Heat a saucepan over medium to medium-high heat, before adding the coconut oil. Once it’s hot, add the quinoa.
Toast the quinoa for about 4 minutes, or until it releases a nutty aroma. Next, pour in the coconut milk and salt, bringing the mixture to a boil. Reduce the heat, cover and let it simmer for 20 minutes—or until all the liquid is absorbed. Once cooked, remove the saucepan from the heat and let the quinoa sit, covered, for 10 minutes. Fluff with a fork before serving.
While the quinoa is cooking, make the honey-lime sriracha sauce by whisking together all the ingredients in a small bowl, then seasoning with salt and pepper to taste.
To cook the broccoli, bring a pot of water to a boil, add the broccoli and cook until tender, about 4 minutes. Drain the broccoli and set it aside.
In a sauté pan, heat the olive oil over medium to medium-high heat, before adding the garlic. Sauté for 1 minute. Then, add the cooked broccoli, lime juice, and salt and pepper to taste. Cook for about 3 minutes, watching carefully to make sure the garlic doesn't burn. Transfer the broccoli and garlic mixture to a bowl.

In the same pan, add the shredded coconut and stir frequently until the coconut flakes brown, about 1 minute. Remove from the heat.
Season both sides of the salmon with salt, pepper and garlic powder. Heat a cast-iron skillet over medium heat, add more olive oil, and cook the salmon for about 2 minutes on each side, until it’s browned on the outside and just cooked through.
To assemble the dish, divide the quinoa between two plates, top each with half of the broccoli mixture and one piece of salmon. Drizzle the sauce over everything. Garnish with the toasted coconut and serve with a lime wedge.
