If you grew up in the '90s or early 2000s, the name Lucy Liu is one that you're more than familiar with. From starring alongside Calista Flockhart in Ally McBeal to being one of Charlie's Angels to her key role as Watson in the hit series Elementary, Lucy Liu is an icon in her own right. And if you weren't aware, she's a darn good cook, too.
Liu's name has been back in headlines thanks to her appearance in Netflix's new series A Man in Full, which caused me to go down a Lucy Liu rabbit hole. In the process, I came across her recipe for Scrambled Eggs and Sweet Potato Home Fries, which looked so tasty and easy, I knew I had to give it a try. So, I gathered what I needed, got in the kitchen and made it happen. Here's how it went.

Ingredients for Lucy Liu's Scrambled Eggs and Sweet Potato Home Fries
For the scrambled eggs, you’ll need large eggs, green onions (or scallions, if you prefer that term), cherry tomatoes, Parmesan and mozzarella cheese, fresh basil leaves, olive oil and salt and pepper. You'll also need a pair of wooden chopsticks.
For the sweet potato home fries, you’ll need pre-roasted sweet potatoes (sliced and with the peels on), olive oil, cayenne pepper and more salt and pepper.

How to Make Lucy Liu's Scrambled Eggs and Sweet Potato Home Fries
To begin, heat a pan over medium heat and add a sufficient amount of olive oil. Once the oil is heated, Liu calls for seasoning the oil to taste, which is a bit unusual but I went with it. Next, carefully crack the eggs into the pan. As the eggs begin to cook, use the chopsticks to gently stir them from the edges inward, ensuring even cooking. (At this point, I realized that she had me season the oil because the eggs were being scrambled directly in the skillet.) Once the eggs reach your desired consistency, transfer them to a plate using the chopsticks.
Top the plated eggs with the tomatoes, scallions, basil and cheese.
For you sweet potato home fries, start by heating a pan over medium to high heat and drizzle in some olive oil. Once the oil is hot, season it with salt, pepper and cayenne pepper to your liking.
Next, carefully place the sliced sweet potatoes into the same skillet with a bit of oil. Cook until they're golden brown on both sides. Once the sweet potatoes are beautifully browned, serve them alongside your eggs. And just like that, your flavorful dish is ready to enjoy!

What I Thought About the Lucy Liu's Scrambled Eggs and Sweet Potato Home Fries
After tasting Lucy Liu's scrambled eggs and sweet potato home fries, I can say that I was utterly blown away. From the first forkful, I knew I was in for a treat. I loved the creamy texture of the scrambled eggs combined with the crispy, yet tender sweet potato home fries.
The seasoning was spot-on and enhanced the natural flavors without overpowering them. I couldn't help but marvel at Lucy Liu's ability to transform simple ingredients into something truly wonderful. It's just eggs and potatoes, but this combination surprised me in the best way.
The technique of using chopsticks to scramble the eggs is one that I love as it helps save dishes because you're not mixing the eggs in a separate bowl and the eggs were extra fluffy and creamy. This dish truly surpassed my expectations and has earned a well-deserved place in my breakfast rotation.
