PB&J Sushi: The Classic Sandwich ... With A Twist

There are some classic combinations that just can't be beat. Cookies and milk, pancakes and syrup, and the lunchbox sandwich to end all lunchbox sandwiches: the PB&J. Sometimes even classics could use a remix, and that's exactly what we did with the peanut butter and jelly sushi!
Personally, I'm a big fan of crust, but I know there troves of crustless crusaders that will be happy to hear this recipe requires you to cut off the crusts! (It makes for much easier rolling.) Flatten your slice out with a rolling pin and you're in business! Next, spread your bread with a thin layer of peanut butter (or almond, or cashew, etc.) and a thin layer of your favorite jelly. Now comes the fun part: rolling! Some jelly trying to escape out of the ends? No problem! Unlike traditional sushi making, PB&J sushi requires little-to-no precision!
When you've got your roll, slice it into rounds (I prefer a serrated paring knife) and serve! Wanna fancy up your plate a little? Add a swoosh of peanut butter, some crushed peanuts, or maybe even dust your rolls with cinnamon. Go in with chopsticks or your fingers, it's is a PB&J after all!
