Every once in awhile you gotta break the breakfast monotony. As much as I love my daily yogurt and granola, life can feel a little stagnant if you start every day the same.
These omelet stuffed peppers are the perfect way to mix it up, plus they serve up a healthy dose of protein for you early morning energy needs. They're also perfect for feeding a crowd - Sunday brunch anyone?
To start, whip up some scrambled eggs with your favorite mix-ins. We're talking bacon or ham, cheese, veggies, herbs, whatever your heart desires! Make sure they're evenly mixed and pour into your pre baked peppers. Depending on how large your peppers are, you might be able to get two full eggs worth of mixture per half pepper. Bake until no wetness remains (they will puff slightly) and let cool for a minute or two. Dig in and let the monotony of breakfast rituals fade away.
