Why Frozen Dinner Rolls are the Secret Ingredient for Shortcut Focaccia
A bag of frozen rolls means the dough is already done for you, leaving you with the fun part: adding your favorite toppings, baking the bread—and eating it. To make their faux-caccia, the Food Dolls use 20 individual dinner rolls from the Rhodes brand, but feel free to use your favorite grocery-store brand. One important note: Read the package carefully to make sure you're buying raw dinner rolls, not the precooked kind.

How to Make Shortcut Focaccia
1. Line em' up. Take 20 frozen dinner rolls and arrange them in a greased baking dish, leaving about a half inch of space between each roll. Brush the tops with olive oil.
2. Let it rest. Place the baking dish someplace warm, such as a cold oven or the counter (if your kitchen is nice and toasty) and let the dough balls double in size. A head's up that you're gonna need to build in some time for this step. No matter which brand you choose, this will take a few hours. For Rhodes rolls, for example, it takes between 4 and 6 hours.
3. Dimple, dimple, dimple! Once the risen rolls meld together into one puffy sheet of dough, drizzle with a generous glug of olive oil. Gently press the dough with your fingertips, making sure to push down to the bottom of the baking dish. This move is what creates those signature focaccia dimples and helps create beautiful bubbles throughout your bread.
4. Make it rain with toppings. Sprinkle the dimply dough with any dried spice blend you have on hand. (Everything but the Bagel Seasoning, anyone?) In their video, The Food Dolls use za’atar, a delicious Middle Eastern blend that contains dried thyme, oregano, and marjoram as well as sesame seeds and sometimes sumac or cumin.
5. Bake the focaccia for 20 to 25 minutes, until it’s light golden brown and set in the center. Turn the bread out of the baking dish, and tear right in!
How to Serve Focaccia
It's hard to beat a small bowl of olive oil on the side for dipping. To make it a meal, pair the focaccia with a big bowl of soup or salad. Feeling artistic? Grab your favorite vegetables and herbs and create a garden focaccia. And definitely, absolutely use a chunk to build a big Italian deli-style sandwich.
