See how a virtual nutrition business helps residents heal relationship with food

BATON ROUGE, La. (BRPROUD) — Telehealth visits are expanding rapidly in the medical field since the pandemic. In 2024, visits are still quite popular.

One graduate from LSU seized the opportunity and turned her passion of nutrition into a virtual private business. She calls it Harvesting Nutrition LLC.

“With the journey of my passion, it started off in more of an unhealthy way,” said Elizabeth Courville-Raiford.

Courville-Raiford is a registered and licensed dietitian in southern Louisiana. Her love for nutrition started at the age of 16.

“I started to just cling to lots of what I would now call misinformation about nutrition and my pattern with eating became very disordered,” said Courville-Raiford.

Courville-Raiford said her life became quite difficult due to her eating patterns in high school. She said it made her daily life difficult.

“I had actually lost a ton of weight; I got comments all the time about how I needed to put on weight, and it was just so rigid that, that I had stress about, you know, even when I was going out to eat with my family,” said Courville-Raiford. 

However, her interest in nutrition never wavered. She soon wanted to learn more about the field and eventually she obtained more knowledge about herself.

“As I learned more about the field, I came to realize I did have a problem and that my relationship with food was disordered,” said Courville-Raiford.

However, through the turmoil, she triumphed. She graduated from LSU and opened a virtual private practice. When she first opened, she did not accept insurance. However, now she takes several insurances.

“I started with a handful of clients and now on a weekly basis I see somewhere between 12 and 16 clients,” said Courville-Raiford.

She said her goal is to help people heal their relationship with food. Her sessions include meal prepping, a check in and a list of goals. They last about an hour or so.

“It’s tough to be a woman in the world now and I think you feel ashamed over food, you feel shame over your body. Elizabeth is so good at taking shame out of the equation,” said Elizabeth McDougal, client. 

McDougal has been a client of Harvesting Nutrition LLC for over a year. She suffers from an autoimmune disease.

“All of my labs have improved like crazy, a crazy improvement in labs. I had glucose numbers that improved, and I had cholesterol numbers that improved,” said McDougal.

In addition, she was able to overcome guilt, shame and embarrassment when it came to her body.

“Over the course of our sessions I just experienced amazing growth in that area,” said McDougal.
