Simply Recipes 2019 Meal Plan: October Week 3

Clean out your pantry! This meal plan is all about keeping dinner simple and whipping up quick, easy, and delicious recipes. Vegetarian Green Chile Enchiladas, Pasta with Tuna, Ginger Pork Rice Bowls, Easy Chicken Lo Mein, and a Double Stack Hamburger to round out your week!

The start of the week is going to be a bit hectic for me because of a big work event. Whenever my Monday or Tuesday is super busy, I feel like it's hard to get a good grasp on the rest of the week.

This week's recipes are definitely quick and easy. Let’s consider this a kitchen cleanout!

Raid your pantry to use jarred salsa and that bag of tortillas you forgot about to make enchiladas. Or use your dried pasta and canned tuna for a quick recipe with arugula.

Switch up the ingredients in recipes like the pork rice bowls or lo mein to use of all the random veggies rolling around in your fridge. (I can’t be the only one who goes a little overboard at the farmers’ market every now and then.)

There's also a cheeseburger included as an end-of-the-week treat, which I'll probably wash down with a Bee's Knees cocktail.

The star of this vegetarian recipe is the homemade roasted tomatillo salsa verde, which gives the dish its green color. However, if it's been a long day of work and you just can't put in that much effort, store-bought is fine. You can even throw in some shredded rotisserie chicken or black beans if you want to change it up a bit.
