Sunday Brunch: The Italian Homemade Company in West Fulton Market

Making authentic, homemade Italian food doesn’t have to be overly complicated.

Sometimes, the secret is in simplicity.

Take the sauce, for example.

“When you see too many ingredients, something’s wrong,” says Chef Alberto Deiana of The Italian Homemade Company, located in West Fulton Market on Chicago’s West Side.

In the latest edition of the WGN Weekend Morning News Sunday Brunch, Deiana and The Italian Homemade Company General Manager Julia Francisco joined Sean Lewis to make homemade tortellini.

Like all the pasta at The Italian Homemade Company, the tortellini is made from scratch.

“We start from the eggs and the flour,” Deiana explains. “We mix it all together, and we carve the pasta with a knife or with a machine.”

Deiana’s tortellini is filled with pork loin and marinated for 24 hours with garlic and rosemary. It’s then cooked and mixed with mortadella, bologna, prosciutto, parmesan and nutmeg, rolled and folded, and put in sauce.

Fresh pasta, Deiana says, doesn’t take long to cook.

“Two, three minutes,” he says. “It’s really, really fast.”

The Italian Homemade Company has five locations in California and opened its Chicago location, at 947 West Fulton Market, about six months ago.

“It’s a really great market and a really great area to be in, so we’re happy and excited,” Francisco says.
