I Tried TikTok's Viral Rainbow Kale Salad—Here's My Review
Kale has a reputation for being tough and bitter when really, it’s anything but. If prepared correctly, kale is one of my favorite leafy greens. I've found that the key to enjoying kale involves chopping it into small bites, mixing it with a variety of veggies and tossing it with a citrus-forward vinaigrette. Hence why the TikTok viral rainbow salad caught my eye and is now my new favorite go-to way to eat kale.
TikTok creator @bakedbymelissa is the one that got me fully on board with eating kale salads and now there's no stopping me. I stumbled upon this Rachael Ray video of the rainbow kale salad being made and knew immediately that I would be recreating it in my kitchen.

What I Love Most About Rainbow Kale Salad
Rainbow kale salad is much more than kale and salad dressing. First, it is a chopped salad and there is something about chopped salads that make them more appealing to me. It could be how pretty the bite-sized pieces all look in the bowl. Whatever it might be, I can't resist a chopped salad.
Another reason to love this salad is that it can easily be made in advance, making it a great pre-packed lunch option. And since both the kale and the cabbage are hearty, there is no need to worry about them wilting after you add the dressing.
How To Make This Recipe Your Own
I tried this recipe with all my favorite ingredients and you should too. The next time you are putting together a grocery list, here are a few items you may want to include:
kale
bell peppers
red cabbage
yellow corn
green onions
carrots
olive oil
lemons
wine vinegar
Parmigiano-Reggiano cheese
garlic
I also would suggest keeping the dressing to a minimum. A good quality olive oil and a light wine vinegar along with some garlic and Parmigiano-Reggiano cheese is all that is needed. The veggies shine on their own!
1. In a large bowl, make a bed with the chopped kale. Arrange the chopped veggies on top in a rainbow wheel formation.
2. Mix together dressing, pour over salad and mix with tongs to combine.
3. Eat the rainbow and enjoy!
