SAUGATUCK — Uncommon Coffee Roasters is expanding its footprint in Saugatuck, now opening MALU and MALU Café.

The two businesses held soft openings earlier this month, and are separate from the pre-established Uncommon Café.

MALU is located at 302 Culver St. in the former Grow Café and Bistro, while MALU Café is around the corner at 121 Griffith St.

Uncommon Coffee Roasters was founded by Guy Darienzo and Stephen Keye in 1994. The business is now owned by Mauricio Da Silva and Bruno Nobre, who took over in 2021.

The new establishments are named in tribute of Nobre’s mother.

“You could feel the love and passion in my mother’s cooking,” Nobre wrote in a release. “With our commitment to quality, creativity and community, we look forward to sharing her same passion and to becoming a dining destination for both locals and visitors.”

MALU will be the company’s brunch space, while MALU Café offers a more limited menu — focusing on specialty coffees, drinks and baked goods.

Executive Chef Paul Williams plans to offer innovative flavors in a welcoming environment. The menu will include locally sourced ingredients and gluten-free, plant-based and vegetarian options.

“I have a passion for molecular gastronomy and hope to incorporate that in the future as the menu and MALU finds its plan in the heart of Saugatuck,” Williams said. “I’m excited to see where this venture takes us.”
