Start the week with this quick, crowd-pleasing soup that spotlights everyone's favorite cruciferous vegetable. Broccoli is cooked two different ways for its star turn: Simmered until tender for the base and roasted for the garnish. It's so good, everyone will want seconds!

Mediterranean Chopped-Chicken Pita

You could call it an open-faced sandwich, but we think this 25-minute chicken dinner is best cut into wedges and eaten like a pizza. The combination of chicken, hummus, cherry tomatoes, radicchio, and feta is very Mediterranean in all the tastiest ways. The recipe calls for grilling the boneless, skinless chicken breasts halves, we're staying inside and getting out the grill pan.

Beef-Zucchini Meatballs

We're all about making vegetables and whole grains the focus of the plate and eating less meat (but not giving up on it all together). This recipe does that in a wonderful way; the meatballs are half meat and half zucchini and cooked quinoa. Another reason to love this recipe? It's a quick route to a delicious meatball dinner on a weeknight. What's not to like?!

Bucatini with Cauliflower, Capers, and Lemon

Another night, another 25-minute dinner! We love the technique for this one-pan pasta; the thick spaghetti-type noodle cooks in what becomes the sauce and finely chopped cauliflower is added before the dish is finished under the broiler.

Roasted Sea Bass with Sweet Potatoes, Spinach, and Salsa Rustica

You know we love a sheet-pan dinner. (OK, we adore any type of one-dish dinner!) Kick back while the oven does the work tonight, then enjoy the meaty bass fillets with healthy greens and sweet potatoes. We're using capers again tonight, this time in a parsley, oil, and vinegar sauce that's drizzled over the meal just before serving.
