A Southern chicken salad chain is continuing its westward expansion with two new locations in Northern Colorado.

Chicken Salad Chick — a fast-casual chain known for serving its chicken salad by the scoop and sandwich-full — will open restaurants in Windsor and Johnstown next month, according to Northern Colorado franchisee Jessica Zumbrun.

When will the new Chicken Salad Chick locations open?

The eatery's Windsor location, 475 E. Main St., will open first around the second week of August, Zumbrun said. The 2,600-square-foot restaurant will be just east of Freddy's Frozen Custard in Windsor's growing East Pointe Business Park.

Following closely behind, the restaurant's Johnstown location, 4884 Larimer Parkway, Suite 600, is set to open roughly two weeks later near the town's Scheels store, Zumbrun said.

The restaurants will be the second and third locations for Jessica and her husband, David Zumbrun, who signed a development deal for five Northern Colorado Chicken Salad Chick restaurants in late 2021. The couple opened their first location in Greeley last April. All three of the Zumbruns' franchises have drive-thrus.

Specific opening dates will be released on Chicken Salad Chick's Facebook page for each location. The first 100 people in line at each restaurant's grand opening will win free Chicken Salad Chick for a year, Jessica Zumbrun said. You must be at least 16 years old to receive the free offer.
