Woodshop by UnHitched Brewing Co. opens in Fourth Street Collective

CANTON ? Woodshop by UnHitched Brewing Co. has gotten down to business in the Fourth Street Collective in downtown Canton.

Located inside Deli Ohio, at 328 Walnut Ave. NE, the operation fits in with the previously open deli and pizza shop called Mike's Pizza.

Adam Longacre, co-owner of UnHitched and the Woodshop, is excited to be open among the other operations.

“Our craft beers at this location will all be fermented for six to 24 months in (giant oak barrels), thus the name Woodshop," Longacre said. "We’re very excited to be able to craft and sell beer at this location.”

Fermentation will take place at the Woodshop. Primary emphasis will be crafting distinctive lagers, saisons and sour beers currently not offered at UnHitched’s Louisville location.

The brewing area has an industrial vibe, with glass windows from the 1900s, wood tabletops crafted by the team, and an eclectic mix of chairs. It’s an open and inviting space. Patrons can enjoy a mix of UnHitched staples plus Woodshop beers on tap. Over time, more of the tap lines will feature wood fermented beers, with many aging for 12 months or longer, as well as a revolving house sour.

Head brewer Garret Conley will be using the solera brewing technique for many of the exclusive offerings.

Initially, Woodshop’s beer offerings will be made in Louisville. Longacre knows that “it will take a minute” to get everything fermenting at the Canton location. The goal, however, will be 50% or more to be crafted at Woodshop, and to have some products trickle in from Louisville.

Canned brews from UnHitched are available at Woodshop, but the hope is to eventually be able to bottle or can the sours as well.

Just like the Louisville location, 100% of Woodshop’s beer ingredients are grown and processed in the Midwest, within a 400-mile radius of the taproom.

Currently, three beers are featured ? Two-Tree (giant oak barrel-fermented house Mid ‘Talian Pils on slow pour); Arquebus (blonde sour, Sauterne aged and fermented for 18 months); and Fellowship’s Finest (porter, smooth with notes of dark chocolate, espresso and caramel).

“The addition of Mike's Pizza and Woodshop reflect a joint endeavor to expand Deli Ohio while maintaining a focus on craftsmanship and quality,” said Ryan Miller, owner of Deli Ohio and co-owner of Mike’s Pizza. Miller is also a board member of the Downtown Canton Partnership.

The overall mission of the Fourth Street Collective, Miller and Longacre added, is to take a collaborative effort to their businesses as needed, all while helping build the local economy and encouraging a strong, sustainable community in Canton.

The Collective allows each of them to stay in their lane and focus on what they individually do best but call upon each other’s knowledge and experience as needed. One example is Woodshop’s cocktail program, which they worked on together.

As part of the Fourth Street Collective, you’ll be able to grab a sandwich by day, New York style pizza by night, and beer all day long. Cocktails include a Hugo (Giffard wild elderflower, prosecco, soda water and mint) or a Nocino Old Fashioned (Evan Williams bonded bourbon, Nocino, cincque). A selection of wines also is available, by the glass or bottle.

Another exclusive offering at Woodshop are canned margaritas and palomas from Big Star, Chicago’s bourbon- and beer-focused, taco-slinging, honky-tonk hangout that has a cult following.

Looking ahead, Miller and Longacre are working on a biergarten out back with a stage for music, wraparound bench seating and picnic tables scattered throughout.

Woodshop’s official ribbon cutting ceremony is planned for 11:30 a.m. Thursday, complete with food and drink for purchase, a DJ and raffle prizes.
