We're all about low-carb errthing right now, and while we've done the obvious stuff like turn zucchini into pasta noodles and cauliflower into a pizza crust, there are definitely some comfort food faves that were still left needing the low-carb treatment–like tacos. A life without Mexican food is not one we are here for, so we made taco shells out of zucchini and life has never been better.
It sounds complicated, but it's actually pretty simple. You mix grated zucchini together with almond flour, cheddar cheese, egg, and some garlic powder. Scoop onto a baking sheet, press down until they're about 1/8-inch thick, then bake until the shells are lightly browned and crisp.
You can fill them up with your filling of choice - we used scrambled eggs, bacon, cheese, salsa, avocado, and cilantro for a low-carb breakfast variation-but you could also use ground turkey, ground beef, chicken, shrimp, or whatever your heart desires. Tacos all day, everyday.
