The school was founded in 1920 with the name West Allis High School. The name was changed to West Allis Central in 1941.

Dan Jansen and Chris Witty are both Winter Olympians who attended West Allis Central. Jansen was a gold medalist speedskater. Witty is also a speedskater who won a Gold Medal in the 1000m in 2002, a distance that broke the world record. The Pettit National Ice Center, a training site for the U.S. speedskating team, is located on the state fairgrounds in West Allis.
Chellsie Memmel also went to West Allis Central before becoming a 2005 world champion gymnast. She now serves as technical lead of USA Women's Gymnastics while also teaching gymnastics in New Berlin.
