Local restaurant inspections: Greasy walls, black substance, lessons in hand-washing

Here are the Wichita Falls-Wichita County Public Health District restaurant inspection scores for Wichita County conducted May 21–24.

Scores in each category are listed by most recent inspection date. The health department conducts regular inspections of restaurants, retail food establishments including mobile food units, and school, daycare, hospital and nursing home kitchens to help keep residents and visitors safe.

During May 21-24, the department conducted 10 inspections at eight sites. The inspected restaurants all passed.

Inspector notes: Saw employee change gloves without washing hands and instructed manager of proper hand-washing technique during inspection. Need to properly label all chemicals. Two employees must obtain current food handler certificates within 10 business days from inspection.

Thermometers needed in two refrigerators and chest freezer. Chlorine chemical testing strips needed to test sanitizer effectiveness. Soap and paper towels needed at hand-washing sink.

Chicken box fridge doesn’t seal properly. Raw frozen fish thawing in water. Unclean can opener. Damaged ceiling in back needs repairs. Mops must be hung up to dry properly after use. Wooden swinging door appeared to be damaged and must be made cleanable. Paper towels and covered trash can needed in employee restroom. Paper permit must be on display for public view.

Denny’s, 1206 North Central Freeway: 74

Inspector notes: Cold hold items such as spaghetti sauce and other cold hold items are at room temperature on the cold hold line. Breaker is not working, and food has been sitting without proper temperature control. Food was discarded to correct on site.

Food in freezer has large ice mounds and crystallization. Boxes are exposed and have crystals on them. Did not see employees washing hands between tasks and handling food. Water is pooling in the bottom of the reach in refrigerator and is mixed with food particles and grease.

Reach in refrigerator and the cold hold unit on the line are not holding temperatures required by the state. Date marking was not in place at time of inspection. Dish room is dirty and has black substance on walls and under counters. There is a black substance on the wall in the grill area that appears to be a water line.

Ice cream well needs to be defrosted and cleaned well. Shake machine was left dirty with adhering ice cream splashes. Counters are cluttered and need to be cleaned. Dish racks are excessively dirty. They have these racks filled with silver ware and other dish items for storage. They need to be replaced immediately.

There is food and grease on walls and ceilings in the grill area, service area and dish room. Cleaning has not been kept up, and it is excessively dirty. The vents over the grill area are excessively greasy and are dripping off the vents and fire suppression system onto the cooking surface.

There is a note that the kitchen range hood is due to be cleaned in June. Employees must maintain it until it is professionally cleaned. Floors are not well grouted and have standing water in the cracks. There is food and grease in them as well.

Walls floors and ceilings need to be cleaned to remove food and grease. Walls and ceilings in kitchen area and storage areas need repair and cleaning to remove grease and food splashes. Holes in wall must be addressed as soon as possible. Door frame in the mop sink room in poor repair and needs to be addressed. These items have been a problem in past inspections.
