3 QUESTIONS
...about making seasonal tomatoes last
As we look toward the fall, I asked Green Spoon co-creator Fanny Singer, who develops recipes with Greta Caruso, for tips on how to extend summer flavors past the season.
Lily: Any dishes that are perfect for the transition from summer to fall?
Fanny: Greta and I love to make big batches of tomato confit with the last of the year’s tomatoes and freeze them in airtight containers. You can preserve that summer flavor well into late fall and winter. Here’s the recipe.
Lily: What’s your No. 1 tip for ensuring that the confit turns out perfectly every time?
Fanny: Use the juiciest and most flavorful peak-season tomatoes you can find! We’d suggest using your senses when you’re shopping to guide you: Smell your tomatoes. Feel them carefully for mushy spots or bruises. Taste a sample if you can.
Anthony: What are some tasty ways to use the confit once I’ve made it?
Fanny: Greta and I like to blend it for a quick pasta sauce, spread it on a piece of garlic-rubbed toast with some ricotta and fresh basil or fold it into a salad with peppery arugula, feta cheese and a splash of red-wine vinegar.
