Fig Olive Oil Cake

Today’s cake of the day comes from Diana Yen’s Jewels of New York. Yen is a photographer, food stylist, and entertaining guru based in New York City who published her first cookbook, A Simple Feast, this spring. But back to the cake: olive oil keeps the dough moist, freshly whipped  cream, separates each layer, and figs adorn the top. Yen finishes it with a drizzle of honey-infused thyme.
