In a state full of well-known and well-respected lobster establishments, Bite Into Maine — a seasonal mobile eatery in the Portland area, owned by couple Karl and Sarah Sutton — has been making a name for itself with its six traditional and original lobster rolls, all on New England-style buns. The “Picnic” style contains a layer of coleslaw, hot butter, and a dash of celery salt. For adventurous eaters, rolls get a little saucy with flavors of wasabi, curry, and chipotle.
